How we build it

The orgeat is the work: oats toasted and steeped into a milk, sweetened, and emulsified into a syrup with real body. Shaken hard with lemon, spirit, and spice, it foams into something plush without a single egg white. Served over rocks with fresh-grated nutmeg, because the smell is half the trophy.
