The Comfortable One

Vanilla Toast8 at the bar

A vanilla latte with rosetta art and star anise

Every board needs one drink that feels like a warm kitchen, and Vanilla Toast is ours: brown butter and vanilla bean in a latte. It’s the most approachable thing we make, and we refuse to let approachable mean lazy.

How we make it

Butter browned slowly until the milk solids toast to hazelnut and the whole pan smells like the inside of a bakery — that’s the “toast.” It’s emulsified into a syrup with whole vanilla beans steeped in, seeds and pod, no extract, no “vanilla flavor.” Double shot, steamed milk, done.

Why our way is best

The vanilla latte is the most ordered espresso drink in America and the most phoned-in — a pump of clear syrup that tastes like a candle. Browning the butter adds the nutty, salty depth that makes baked goods taste like home, and real vanilla tastes like an orchid pod instead of a chemistry set. Comfortable, yes. Basic, absolutely not.
