Tempest

A dark red wine float over a citrus cocktail

If you put your name on a drink, it had better earn it. The Tempest is our house original: a bright, spiced citrus sour with a float of dry red wine poured slowly over the back of a bar spoon, so it hangs above the glass like weather about to happen.

How we build it

Fresh citrus and a warm spice syrup shaken hard, strained over ice, and then the wine — poured gently so it layers instead of mixing. Left alone, it’s two drinks stacked; stirred, it becomes one. We hand it over unstirred, because watching the front roll in is the point.

Why our way is best

The wine float is an old trick (ask a New York Sour), but the spice underneath is ours, and the theater is the brand: dark over bright, storm over calm, exactly like the logo on the door. It’s the drink we suggest when someone says “surprise me” — the answer to what a coffee bar named after a storm drinks after five.
