The Smoldering Bloom is exactly what it sounds like: honey cooked past caramel to the smoldering edge of bitter, then pulled back by lavender steeped into the syrup. Fire and flower, in a latte. It’s the drink on our board most likely to convert a person who thinks flavored lattes are for cowards.

How we make it

We burn local honey in small batches — deliberately, to the point where sweetness picks up smoke and toffee and a pleasant scorch — then steep culinary lavender into the warm syrup so the floral note infuses instead of perfuming. Built with a double shot and steamed milk, finished with a breath of dried lavender.

Why our way is best

Lavender drinks fail by tasting like soap; honey drinks fail by tasting like nothing. Burning the honey gives the lavender something serious to push against, and the espresso’s own bitterness ties the two together. Sweet, but with a past. Floral, but with a spine.
