The PB & Jam is exactly what it sounds like, executed like it matters: our Liège waffle under whipped peanut butter and house-made jam. It’s the flavor memory every American carries, transplanted onto caramelized brioche — nostalgia with a crust.

How we make it

The peanut butter is whipped with a little cream until it goes from spreadable to cloud, and salted just enough to bite back. The jam is made in-house from whatever fruit the season is bragging about — strawberry in June, peach in August, spiced plum when the weather turns. Both land on a waffle straight off the iron, so the peanut butter slackens into the grid and the jam warms through. Crushed peanuts and flaky salt finish it.

Why our way is best

The sandwich version had two jobs: comfort and speed. We kept the comfort and spent the speed budget on craft — real fruit jam instead of jelly, whipped texture instead of a cold smear, hot caramelized dough instead of sandwich bread. It tastes like being eight years old, if you’d had excellent taste at eight.
