The Garden Swell

Ocean’s Garden is our green drink: fresh mint and herbs, lime, and an aggressive charge of soda, served tall over pebble ice. It sits somewhere between a mojito and a garden gimlet, and it exists for the seat on the patio when the evening is warm and the band hasn’t started yet.

How we build it

Mint gently pressed — never pulverized; shredded mint turns a drink bitter and leaves you flossing. Lime and a light cane syrup, the spirit shaken bright, then built tall with soda and crowned with a full bouquet of mint so every sip arrives through the smell of a garden.

Why our way is best

Effervescence is a texture, not an afterthought, and most herb drinks lose it by overworking the produce. We treat the mint like the delicate thing it is and let the soda do the drama. The result drinks like a sea breeze through a kitchen garden — which is exactly the postcard the name promises.
