Ghost of the Agave is our margarita with the tequila politely excused: agave nectar, fresh lime, and a whisper of smoked salt where the spirit’s fire used to live. Citrus, agave, refreshing — the flyer says it in three words, and all three survive the exorcism.
How we build it
Fresh lime and real agave nectar shaken hard over dense ice — the shake matters just as much without alcohol, because texture is what makes a zero-proof drink feel built instead of poured. A pinch of smoked salt in the shaker stands in for the agave plant’s roasted heart, and a half salt rim finishes the impression.
Why our way is best
Most virgin margaritas are limeade with an identity crisis. The smoked salt is the trick: it adds the shadow of roasted agave that your palate expects, so the drink reads complete rather than missing something. A third of any room isn’t drinking on a given night. This is for them, at full ceremony.
