The Calm Center

Eye of the Storm is the still point on our zero-proof list: a sparkling cascara soda — bittersweet, citrus-bright, deep crimson — named for the quiet at the center of the spin. Cascara is the dried skin of the coffee cherry, usually discarded at the farm, and it brews into something like hibiscus crossed with raisin and rosehip.

How we build it

The cascara comes from Finca La Torre, the same Colombian farm as one of our single origins — we asked them to save what they’d normally compost. Steeped and reduced into a syrup, charged hard with soda over ice, finished with lemon and a ribbon of orange oil. Served in a stemmed glass, because zero proof doesn’t mean zero occasion.

Why our way is best

Coffee’s fruit is the flavor almost nobody serves, and it happens to be a perfect soda: tannic enough to feel adult, fruity enough to refresh. Buying the cherry skin also puts a second payment into a farm we already trust. Better drink, better math, zero waste — and the storm on the label stays outside the glass.
