Drip is the fast cup — brewed in quantity, ready when you are. It’s the workhorse of every coffee shop and the most quietly disrespected coffee in America, left cooking on hotplates until it tastes like the bottom of a diner pot. We think the fast cup deserves the same respect as the slow one.
How we do it
Same beans as our pour-over program, ground fresh for every pot and brewed on a precision brewer with the recipe dialed per coffee — dose, grind, water chemistry, all of it. It holds in a thermal dispenser, never on a burner, and at thirty minutes we dump whatever’s left and brew fresh. There’s a timer on the dispenser. You’re welcome to check it.
Why our way is best
The thirty-minute rule costs us real money in dumped coffee, and it’s the best money we spend. Coffee doesn’t go bad at minute thirty-one, but its aromatics fade and its acids sharpen — the cup stops being an argument for the farm that grew it. If you order drip at 6 AM or 11 PM, you get the same cup: recent, sweet, alive. Zero asterisks.
