Dark Matter is our mocha with the gravity turned up: a brownie-batter build of double dark chocolate ganache, cocoa, brown sugar, and a pinch of salt, pulled together by a double shot. The name is truth in labeling — it’s dense, it’s dark, and it exerts a noticeable pull on people walking past the bar.
How we make it
The same 70% couverture ganache as our standard mocha, doubled, with cocoa and brown sugar whisked in until the base genuinely resembles brownie batter — that fudgy, just-mixed stage everyone licks off the spoon. Salt keeps it from tipping into candy. Espresso and steamed milk bring it back to drinkable.
Why our way is best
“Brownie batter” is usually a syrup label’s creative writing exercise. Ours is a literal description of the base in the pitcher. The salt and the espresso’s bitterness hold the whole thing in tension, so it finishes like dessert without drinking like frosting. Order it with a croissant and cancel your afternoon.
