The Co-Pilot flies the same route as a gin and tonic with none of the paperwork: a zero-proof botanical spirit — juniper, rosemary, citrus peel — built tall with good tonic and fresh lemon. Botanical, citrus, complex, per the flyer. Nothing to declare.

How we build it

The NA botanical spirit gets the full G&T ceremony: a proper glass, dense ice to the rim, tonic with real quinine poured down a bar spoon to protect the bubbles, and a slapped rosemary sprig whose oils you smell before the first sip. Rushed ice and flat tonic are the two ways this drink dies; we allow neither.

Why our way is best

Botanical NA spirits live or die on serve quality — under-iced and over-diluted, they taste like herbal water. Treated with the same rigor as the leaded version, the juniper and rosemary actually land. It’s the drink for the second seat: fully present, fully instrumented, and cleared for the whole evening.
