Citrus Shortbread is the one item on our board with a rule attached: iced only. Lemon and espresso is a bright, almost impossible pairing that collapses into curdled chaos when hot — but cold, layered, and capped with cream, it drinks like a lemon bar met a coffee milkshake and both improved.

How we make it

A lemon curd syrup — real zest, real juice — meets a brown-butter shortbread base that brings the cookie’s salty, sandy richness in liquid form. Cold espresso over ice, the citrus-shortbread blend shaken in, and a lightly salted cream top floated last, so every sip passes through cream into bright.

Why our way is best

Lemon in coffee sounds wrong for the same reason espresso tonic sounds wrong, and it works for the same reason: acid frames coffee’s fruit. The shortbread rounds the sharp corners and the cream top does the diplomacy. The iced-only rule isn’t attitude — it’s chemistry. Some drinks have a season, and this one’s is permanently July.
