Cooked Dark on Purpose

Burnt Amber8 at the bar

A caramel-toned latte dusted with spice

Burnt Amber is a caramel latte for people who think they’ve outgrown caramel lattes. We cook the sugar past golden into true amber — the stage where caramel picks up smoke and complexity and stops being a candy flavor — then build it into toffee with butter, brown sugar, and salt.

How we make it

Small-batch caramel taken deliberately to the edge, killed with cream and butter at exactly the right second, salted twice: in the syrup, and flaked on the foam. A double shot and steamed milk carry it. The color of the finished drink matches the name, which pleases us more than it should.

Why our way is best

Commercial caramel syrup is stopped early and stabilized sweet, which is why caramel drinks everywhere taste like the smell of a mall. Real dark caramel has bitterness, smoke, and a saline edge that plays with espresso instead of hiding it. This is the board’s biggest seller among people who order it twice — once out of curiosity, forever after out of loyalty.
