Blueberry Limon is the flagship of the waffle board: warm blueberry compote and house lemon curd over a caramelized Liège waffle, finished with powdered sugar. Blueberry and lemon is one of the old, undefeated pairings — the berry’s jammy depth needs exactly the acid the lemon brings, and the waffle’s caramel crust referees.

How we make it

The compote simmers blueberries just until they burst and go glossy — whole fruit, lemon zest, a restrained hand with the sugar because the waffle carries plenty. The curd is made in-house with real lemons and too much butter, which is the correct amount. Both go on warm, so the curd slackens into the grid and the berries stain everything purple in the best way.

Why our way is best

Fruit waffles fail from a can — syrupy compote-in-name-only over a cold waffle. Everything on this plate was fruit or butter recently, and everything is warm when it lands. It’s the most ordered thing on our iron and the reason the powdered sugar shaker never gets a day off.
